Raita Yogurt with Cucumber and Mint
Serves 6
2-2/3 cups plain yogurt
1 small cucumber, peeled and coarsely grated
2 TB finely chopped fresh mint
½ tsp ground roasted cumin seeds (I usually don’t bother toasting)
¼ tsp cayenne
1 tsp salt
Freshly ground pepper
Put the yogurt in a bowl and beat lightly with a whisk until creamy.
Add the other ingredients and mix.
Cover and refrigerate until ready to eat.
