Mini Muffalettas

These are great to prepare in advance for a party because they stay fresh in the fridge and don’t get soggy, even for a day or two.

A bag of Ecce Panis Focaccia Rolls (from King Soopers bakery area – I got on Arapahoe-30th) They are small (about 4” x 4-1/2”), square rolls covered with thyme. If you can’t find those, I’d suggest focaccia, baguette or other crusty bread that you can cut to size more than the softer “slider” burger-type rolls you can buy in the bread section.

Olive Salad (below)

Olive oil, good quality

Thick Ham (I used Tavern ham from King Soopers, 1 slice per roll, about 1/3-1/2 lb)

Boars Head Soprasseta slices (I bought a package in front of King Soopers deli and used two slices per roll)

Provolone, one slice per roll.

I just let the deli slice everything the way they normally do and the thickness was good.

Slice rolls in half horizontally with a serrated knife, cutting the dome off.

Cover the flat half generously with olive salad, spreading to edges.

Top with one slice of ham (fold or cut in half if large), a slice of provolone, then two rounds of soprasseta.

Brush the top side of the roll generously with olive oil.

Assemble, cut into quarters with serrated knife while holding sandwich together snugly, reassemble and wrap in tin foil sheets and store in fridge to “marinate”. You can serve in “opened” tin foil packets– with the quarters separated a bit. Or just take out of the foil and serve sections if they won’t fall apart.

Olive Salad

I got from the first three items from the olive bar at King Soopers.

2/3 cup pitted and chopped* green olives with pimentos

2/3 cup pitted and chopped* Kalamata olives

1 roasted red pepper

3 cloves garlic, minced

1 anchovy fillet, mashed

1 tablespoon capers, drained and chopped

1/2 cup chopped fresh parsley leaves

1 teaspoon chopped fresh oregano

1/2 teaspoon freshly-ground pepper

1/2 cup good quality extra-virgin olive oil

*I chopped everything more finely than standard to work well on small rolls.
