Gye's Harvest Gazpacho

3 cans (14.5 oz) Diced Tomatoes in Juice

½ TB Minced or Chopped Garlic

1 Tbls Oregano

¼ Cup Olive Oil

½ Cup Red Wine Vinegar

¼ Cup (or less) Sugar

1/8 Cup lime juice

6 oz Tomato or V8 Juice

½ TB Salt

¼ TB Black Pepper

¼ TB Tabasco and/or Cayenne Pepper (more or less as you prefer)

Mix all the above together in large bowl.

Add the following, chopped to preferred size:

½ Cucumber (seedless/English cukes are best - unpeeled adds color)

1 whole Bell Pepper (orange for color)

½ Red Onion

½ Jicama

Can add chopped avocado just before serving or fresh jalapeños.

Garnish with parsley or cilantro. Also, Sour Cream, if you like.
